Nose To Tail
One blog that I like to follow is The Foodologist from South Australia. It is written by Dr George R Ujvary who works in the smallgoods industry. It's a great little site, but sadly of late posts have been intermittent at best. However it looks as if George is making more of an effort lately, and if you are a fan of Fergus Henderson, who has something of a speciality in nose to tail eating, having written a book about it called funnily enough, Nose to Tail Eating, then this post is for you. It details a wonderful dinner that George and his wife had at St John Restaurant, located near London's Smithfield meat market.
If you're not the squeamish type, go on and check it out. The post is well written and has wonderful photos. And George, could you do me a favour and post a little more often?
A quote from Fergus: "If you are going to kill an animal, it seems only polite to use the whole thing"!

Certainly like the quote.
Yes, excellent writer but no not the spleen.
Hi Tanna, glad to see you back after your holiday! A very English quote, don't you think. I don't think I could come at the spleen either.
